As a busy mom, I don’t have hours to spend in the kitchen anymore. This recipe is easy, and quick to make and bake. Salmon is a staple food in our house, and Aliana loves her fish. This dish is so delicious and the fish stays juicy and tender. Some side dishes I suggest are steam vegetables, corn, and red potatoes.
INGREDIENTS
2 8oz Fresh Atlantic salmon with skin
2 tbs of aioli sauce (used the Trader Joes garlic mustard aioli)
1 tsp dill
1 tsp thyme
1 tsp rosemary
1 tsp salt
2 tbs capers (optional)
1 tbs olive oil
INSTRUCTIONS
- Preheat the oven to 425.
- Cover one small baking dish with foil. Add the olive oil to the bottom of the baking dish before placing the fish on top. Skin side down.
- Spoon the aioli on top of both fillets. Garnish the herbs and salt on top. Add the capers on top (optional). Bake for 20-25 minutes or until the salmon is cooked to your liking. You don’t want to overcook the salmon. Serve with your side dishes of choice. Enjoy!
