This quick dessert is fun to make with your kids. This year I wanted to make something different for our Thanksgiving dessert. It has been a while since I had made a homemade dessert dish for Thanksgiving, so I created two simple and fun dishes to make with Aliana every year. What better way to mix two of my favorite desserts into one big Rice Krispies treats. Each recipe takes 10 minutes to make and then you and your family will enjoy delicious treats that tastes very similar if not better than the real pie.
PUMPKIN PIE RICE KRISPIES TREATS
INGREDIENTS
PIE CRUST:
- 3 cups Rice Krispies cereal
- 1/2 teaspoon vanilla extract
- 2 Tablespoons butter
- 2 cups marshmallows (mini or large)
- 1/2 teaspoon vanilla extract
- 3 cups Rice Krispies cereal
PIE FILLING:
- 2 teaspoons orange food coloring (check the box to see how to mix the color orange)
- 3 cups marshmallows (mini or large)
- 1 1/2 teaspoon pumpkin pie spice
- 1 1/2 teaspoon cinnamon spice
- 3 Tablespoons unsalted butter
- 4 cups Rice Krispies cereal
TOPPING:
- Whipped Cream
Equipment:
- 8 inch round baking cake pan
- medium saucepan
- Spoon
INSTRUCTIONS
CRUST
- Spray the pan with cooking spray. If you don’t have cooking spray, use cooking oil and rub the cooking oil around the pan with a paper towel sheet.
- Melt the butter in the saucepan over medium to low heat. Stir in the vanilla extract. Add the marshmallows and stir until the marshmallows melt. Add the Rice Krispies and continue to stir until the cereal is well coated.
- Pour the mixture into the pan and use the back of a spoon to mold the crust. Make sure to press firmly and create a crust one inch thick. Set aside and start on the filing while the crust cools down.
FILLING
- Melt the butter in the saucepan over medium to low heat. Stir in the cinnamon spice and pumpkin pie spice. Add the marshmallows and continue to stir until the marshmallows melt.
- Add the orange food coloring and stir until the mixture is all orange. Add the Rice Krispies, continually stirring, until the cereal is well coated.
- Transfer the mixture into the middle of the crust border. Use the back of a spoon, press firmly down to fill in space. Let the filling cool down.
- After the rice krispies cools down, get a butter knife to loosen the border of the pie crust from the pan. Flip the pie upside down onto a serving plate. Cut into slices and add the whipped cream on top.

PEACAN PIE RICE KRISPIES TREATS

- 2 Tablespoons butter
- 2 cups marshmallows (mini or large)
- 1/2 teaspoon vanilla extract
- 3 cups Rice Krispies cereal
PIE FILLING:
- 2 teaspoons brown food coloring (check the box to see how to mix the color orange)
- 3 cups marshmallows (mini or large)
- 1/2 cup chopped peacans
- 1/4 cup dark corn syrup
- 2 Tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 4 cups Rice Krispies cereal
TOPPING:
- Whipped Cream
